Shui Hsien (Shui Xian, The Water Nymph, The Water Ghost) - is the name of one of the most known oolongs as well as name of the variety of teaplant that it's made of. The tea has thick leaves, processed into freestyle-convoluted strips of dark-brown colour. The brew is clear, orange-brown. The tea is famous for the accent of orchids, that stays in a mouth for a long time atfer. It is popular in south-east China, where it's served in the morning or with sunday lunch. Shui Xian is produced in many different areas, but this sort from Wu Yi mountains is the most known of all.
